Home-tested Vegetarian Recipes:


Crispy Tofu Fries

- 1 tsp. vegetable oil or spray
- 1 package of extra firm tofu
- 1/2 - 3/4 cup of thick sauce (barbeque, sweet and sour, etc...)
Salt, pepper, garlic and any other seasonings desired.

Slice the tofu into fry-sized strips. Marinade them in the sauce of your choice for desired time, appx. 10-15 minutes. Rub the oil (or spray it) onto a baking tray. Place the tofu in a single layer, not overlapping. Sprinkle with spices. Bake at 350 for 20-30 minutes, until tofu is at desired crispiness.

Vegetable Stir-fry

- 1 tbsp. vegetable or olive oil
- 1 onion, sliced
- 2 medium or 1 large carrot
- 3 cups of broccoli florets and peeled and sliced stems
- 1 1/2 cups of chick peas or diced firm tofu

Seasoning Mixture
- 3 tbsp. of tamari soya sauce
- 3 tsp of rice or white vinegar
- 2 cloves of garlic, minced
- tsp. of minced or grated ginger
- tbsp. honey (if desired)

Combine the ingredients for the seasoning mixture in a bowl and pour over the chick peas or tofu. Heat oil in a wok or skillet over high temperature. Cook onions until golden brown. Add carrots and cook until tender-crisp. Add the remaining ingredients including seasoning mixture and chick peas/tofu; cook until coated and heated through.

**Variations: add snow peas, red or green pepper sliced, mushrooms, bean sprouts, cauliflower or zucchini.
